LIGHT
In English, a beer spoiled by light is said to be “skunked” and, chemically speaking for those interested, the compound 3‑methyl‑2‑butene‑1‑thiol is formed by an isomerization reaction. This compound is one of those found in the liquid sprayed by skunks and is responsible for the distinctive unpleasant smell and taste.
Craft beers should be stored in dark places away from bright fluorescent lights and especially from sunlight. Thanks to the 5 mm neoprene sleeve, practically 100% of UV radiation is absorbed, so the beer will not be affected by this undesirable effect.
TEMPERATURE
As a general rule, for every 10ºC increase in temperature, the beer’s shelf life is cut in half. Depending on the type of beer, we will need to keep it at different temperatures. For example, in hoppy beers (IPAs, APAs, etc.), the effect of heat is much more noticeable and they can deteriorate quickly at temperatures above 20ºC.
As a general rule, we can define the ideal temperature as between 10ºC and 15ºC depending on the type of beer, with 12ºC being optimal, since at this temperature most of the reactions that degrade beer are deactivated or greatly slowed down. Above this temperature, fatty acids combine with oxygen (a small amount always enters when tapping the keg), producing substances that give the characteristic flavor of paper, cardboard, or damp wood, which will ruin your beer.
On the other hand, for beers to which we add CO2, temperature will be critical, with its worst enemy being fluctuations. By keeping the temperature stable with the sleeve, we achieve proper counterpressure, preventing the beer from becoming over- or under-carbonated, resulting in beer with ideal carbonation.

By keeping the product temperature inside the keg stable, we can regulate the CO2 pressure, thus avoiding both over‑carbonation and de‑carbonation of the product.
The ideal temperature for beer is between 10ºC and 15ºC to maintain its quality (12ºC is optimal). From 17ºC upwards, an unpasteurized beer begins its secondary fermentation, and below 9ºC there is a risk of over-carbonation in less than 24 hours.

LAB TEST:
With an ambient temperature of 30º, a keg with a product temperature of 32º is placed inside the jacket, which is connected to an outlet of the agitator motor pump. Water at zero degrees is circulated through the jacket, returning to the tank at a temperature of 0.5º.
After 16 hours of operation under the same external conditions, we find that the temperature inside the keg is 17ºC and the return water to the bath is 0.3ºC.
After 24 hours, the temperature inside the keg is 14ºC and the return water to the bath is 0.2ºC.
After 36 hours of operation, based on the results obtained under the specified ambient temperature and relative humidity conditions, we find that the internal temperature of the keg has stabilized at around 12ºC. The return water is at 0.1ºC.
