What products do I need to brew beer at home?
A fermenter is essential. It must be a vessel with good thermal resistance that does not impart any flavors to the beer. The fermenter will be sealed to prevent oxygen from entering. On the lid, we will place an airlock valve to regulate the buildup of CO2 during fermentation and again prevent oxidation. In addition, at the bottom, the fermenter will have a small tap that will allow us to draw off the beer. It is advisable to place an adhesive thermometer on the outside of the fermenter to monitor the temperature.
We will also need a paddle made of a non-porous material for stirring, and a sanitizer to sterilize the equipment, such as Clearoxid. For bottling, we will use glass bottles, caps and a manual capper.
Will I need a malt extract to brew my beer?
We could use grain and hops, but since this is the first brew, it’s best to keep it as simple as possible. For this purpose, we will use malt extracts sold in cans. These preparations contain hopped wort reduced to syrup. To complete the ingredients for our first beer, we will need yeast (the type varies depending on the beer style), sugar and water.
At this point, you might ask how much of each ingredient is needed to brew a given volume of beer. This information is provided by the manufacturer of each extract and depends on the beer style. For example, with 1.5 kg of malt extract and the addition of 1 kg of sugar, we could obtain about 20 liters of beer. For a batch of this volume, a 30-liter fermenter will suffice. In any case, it is always advisable to follow the manufacturer’s instructions.
I’ve got my craft beer kit, what do I do now?
Once we have sanitized the equipment, we heat the can of malt extract in a bain-marie for 5 minutes. At the same time, we heat 3 liters of water. However, the exact water volume is indicated by the extract manufacturer. When the water begins to boil, we add the extract. We reserve a little hot water to pour into the can and thus extract all the syrup. We stir with the paddle until it dissolves. When transferring the wort to the fermenter, we must cool it quickly. We can place it in a bathtub with cold water and even ice. You can also use immersion chillers.
Next, we take a glass of wort at about 25ºC and pitch the yeast into it to activate it. We wait a few minutes and then pour the contents into the fermenter. We close it and fill the airlock with alcohol. Then we place the fermenter in a dark room where the bubbling sound won’t bother us. After 9 days, we should fill the bottles. If we find a lot of sediment at the bottom of the fermenter, we can remove it with an auto-siphon so as not to clog the tap.
We add a small amount of sugar or dextrose to the sanitized bottles and cap them using a hand capper. The second fermentation and conditioning will last for about two months, depending on the beer style. And that’s it — you have your own homemade beer!
